San Ignacio and Jaen, provinces in Peru’s Cajamarca department, are known for their natural forests and as the country’s main coffee capital. With a rich history, these regions have grown through coffee production, becoming leaders in tourism and sustainable practices. Our partners at Caravela began working with local agronomists in 2019, establishing relationships with 35 specialty coffee producers. The coffee, named El Guayacan after a majestic, yellow-flowered tree, reflects these long-standing connections. The producers are passionate about sustainable agriculture, managing wastewater and pulping waste effectively. They’ve transitioned from traditional practices to quality-focused ones, improving infrastructure like wet mills and drying areas. The farms, influenced by the Huamantanga Forest and National Sanctuary of Tabaconas – Namballe, boast great biodiversity and ideal microclimates. The Guayacan coffee process involves manual cherry picking, floating to remove impurities, pulping, fermentation, washing, and solar drying. The final parchment coffee undergoes rigorous analysis to determine its quality grade before being sold and processed at the dry mill.
