La Conserva is the Spanish name for fruit jams or preserves that are fruity or jammy. This new offering of coffee is grown in Huehuetenango, Guatemala, a region known for its high altitudes, non-volcanic soil, and dry climate influenced by winds from Mexico. Cultivated mainly in the Sierra Madre de Los Cuchumatanes foothills at elevations up to 3,000 MASL, this coffee is the product of innovative experiments by the PECA team and local farmers. They focus on extending fermentation times to create rich, fruity profiles, featuring notes of ripe fruits and honey. Over 15 small to medium-sized producers contribute to this community lot, often practicing organic methods or minimizing synthetic inputs. Organized into small associations, these farmers access resources collectively, improving cost efficiency and ensuring traceability and consistent quality while intercropped shade trees like avocados and citrus foster biodiversity. This collaboration, active since 2016, has enhanced the uniqueness of La Conserva.
